Raymond DeGeorge of Treasure Island, Fla., advises: "Use good-quality vodka. For a real treat, substitute Grand Marnier for the vodka." Other enhancements DeGeorge recommends include sauteing a large chopped sweet onion before adding the tomatoes, and for carnivores, serving a pan-fried hot Italian sausage on the side. I think using some of the flavored vodkas could make a great variation as well. For added flavor, saute in olive oil.

Ingredients:

3/4 pound linguine
3 large or 6 plum tomatoes, coarsely chopped
1 cup basil, firmly packed and coarsely chopped
1/4 cup vodka
1/4 cup heavy cream
Instructions:
Prepare pasta according to package directions.
Meanwhile, in a well-oiled large skillet over medium-high heat, saute tomatoes and basil for 1 to 2 minutes. Season with salt and pepper to taste. Lower heat and simmer for 10 to 15 minutes, stirring occasionally. Add vodka and bring to a boil. Add cream and cook, stirring, until heated through.
