Last summer, columnist John Kessler attempted to sample everything on the Alabama Bureau of Tourism and Travel's list of "100 Dishes to Eat in Alabama Before You Die." Of the 50-plus dishes he successfully consumed, this extremely simple concoction was among his favorites.

Hands on time: 15 minutes  Total time: 24 hours and 15 minutes  Serves: 10

Ingredients:

    3 (15-ounce) cans black-eyed peas, rinsed and drained
    1/4 cup chopped red onion
    3 tablespoons each chopped green, red and yellow bell pepper
    1/2 cup quartered cherry tomatoes
    1/4 cup chopped parsley
    1/4 cup balsamic vinegar
    1/4 cup olive oil
    2 tablespoons granulated sugar
    Salt and pepper

Instructions:

Combine black-eyed peas, onion, peppers, tomatoes, parsley, vinegar, oil and sugar. Season with salt and pepper. Marinate for 12 to 24 hours before serving.

Nutrition:

Per serving: 203 calories (percent of calories from fat, 33), 8 grams protein, 27 grams carbohydrates, 6 grams fiber, 8 grams fat (1 gram saturated), no cholesterol, 279 milligrams sodium.
