Cocktail hour

Remember those fruity drinks of yesteryear, before the cosmo, before everything was called a martini simply because it was served in a martini glass? Remember? Of course you do. Think on it: Where would our youth have been without a tequila sunrise? How about a Singapore sling? Who remembers “sex on the beach”? They were all such great ways to get our daily dose of vitamin C.
This cocktail, from Malibu Rum, is a throwback to the days when rum and tequila were more popular than vodka, and fruit juice was a favorite mixer.

Hands on time: 2 minutes  Total time: 2 minutes  Serves: 1

Ingredients:

    1 ounce rum
    1 ounce ruby red grapefruit juice
    Dash of grenadine syrup
    Ice
    Champagne
    Strawberry, for garnish

Instructions:

Shake the rum, grapefruit juice and grenadine with ice in a cocktail shaker. Strain into a champagne glass and top the glass with enough champagne to fill. Garnish with a strawberry slice on the rim, if desired.
