What Can I Bring?

Make and take: Bake in a 2-quart foil deep pan or use a covered casserole dish.
Made famous by: DeeAnn Cox of Athens says this was her grandmother's favorite dish to carry to events. "This recipe originally came from a May 1960 publication of the Progressive Farmer. The title of the article was 'Cow Belles share their beef recipes.' " Years after her grandmother's death, Cox said, "I found the original newsletter while going through her old recipes. I recognized it immediately as MeMe's Casserole and have been carrying it since."

Hands on time: 20 minutes  Total time: 1 hour and 10 minutes  Serves: 8

Ingredients:

    1 cup uncooked elbow macaroni
    1 pound ground beef
    1 medium onion, diced
    1/4 cup chopped green pepper
    1 (15-ounce) can diced tomatoes
    1 tablespoon ketchup
    1 tablespoon steak sauce
    2 tablespoons dried or fresh chopped parsley
    Salt and pepper to taste
    1 can cream of mushroom soup
    1 cup grated cheese, like cheddar or Monterey Jack

Instructions:

Preheat oven to 350 degrees. Cook the macaroni according to package directions.
Meanwhile, in a large skillet, brown ground beef. Add onion and green pepper and cook until onions are translucent. Add tomatoes, ketchup, steak sauce and parsley. Cook 10 minutes. Stir in cooked macaroni, and season to taste with salt and pepper. Gently mix in cream of mushroom soup and transfer to casserole dish lightly sprayed with vegetable oil. Sprinkle cheese over top. Bake until casserole is bubbly and cheese is lightly browned, about 30 minutes.

Notes:

"Add a fruit or green salad, bread and sour cream poundcake and you have a carry-out meal that can't be beat, " Cox said.

The original instructions said to cook the ground beef in 2 tablespoons of shortening, but Cox wisely eliminates the extra fat.

Per serving: 322 calories (percent of calories from fat, 64), 15 grams protein, 14 grams carbohydrates, 1 gram fiber, 23 grams fat (10 grams saturated), 63 milligrams cholesterol, 601 milligrams sodium.
