Mexican Fish Fillets

Always on the lookout for meals that fit within the parameters of the 5:30 Challenge, I noticed a recipe on the wrapper the last time I bought fish. I modified it a bit and couldn't be happier with the results. I've tried it with halibut and salmon and both were delicious.

Hands on time:   Total time: 30 minutes  Serves: 4

Ingredients:

    1/2 cup salsa
    2 tablespoons mayonnaise
    2 tablespoons lime juice
    1/2 cup shredded Monterey pepper jack or Mexican blend cheese
    1 1/2 pounds halibut or other firm fish fillets

Instructions:

Preheat oven to 400 degrees. Coat a baking dish and the fish with nonstick spray. In a bowl, mix salsa, mayonnaise, lime juice and cheese. Season with salt and pepper. Spread evenly over fish. Bake for 10 to 12 minutes or until fish flakes easily with a fork.

Nutrition:

Per serving: 301 calories (percent of calories from fat, 41), 39 grams protein, 3 grams carbohydrates, 1 gram fiber, 14 grams fat, 72 milligrams cholesterol, 346 milligrams sodium.
