Susan Kendall of Marietta knows it's hard to please a crowd and feed a family. As the mother of older kids, she says, "Their favorites are tacos and pizza. But there are always the added complications of 'no meat' or 'I don't want dinner, just a bite.' " She came up with this adaptable dinner to keep all satisfied. Kendall adds, "It is all standard kitchen stuff, ready to assemble from cans and the refrigerator so they can be on their way again."

Hands on time:   Total time: 30 minutes  Serves: 4

Ingredients:

    4 (8 inch) flour tortillas
    1 (16-ounce) can refried beans
    2 green onions, chopped
    1/2 cup salsa
    1/2 cup grated Mexican-style cheese

Instructions:

Preheat oven to 375 degrees. Spray tortillas with cooking spray; stack and heat in microwave for 30 to 45 seconds to soften. Lay tortillas on a baking sheet. Cover tortillas with refried beans. Top with green onions, salsa and cheese and bake for 6 to 7 minutes or until heated through.
