Q: Nothing is more comforting than a bowl of homemade creamy tomato soup. Do you think Mick's would mind sharing its wonderful recipe? It's not offered every day at the restaurant, but when it is, it's oh, so good!

A: There were several requests recently for this recipe. Fresh and canned tomatoes form a chunky base, and cream provides the perfect balance to smooth it out. Because canned tomatoes can yield varying amounts of liquid, add water to achieve the desired consistency.
Hands on time: 20 minutes Total time: 30 minutes Serves: 6-8
Ingredients:

1/4 cup oil
3 cups chopped onions
1/8 cup all-purpose flour
3 cups plum tomatoes, chopped
2 (28-ounce) cans diced tomatoes in juice
3 teaspoon salt
1 teaspoon pepper
1 teaspoon dried thyme
1 teaspoon minced garlic
1 teaspoon granulated sugar
1 1/2 cups heavy cream
Instructions:
In a large stockpot, add oil. Saute onions until softened. Stir in flour and cook for 2 minutes, stirring constantly. Add plum tomatoes, diced tomatoes, salt, pepper, thyme, garlic and sugar and bring to a boil. Reduce heat, stir in heavy cream and remove from heat.
