On a chilly night, this family-friendly comfort meal provides meat, potatoes and vegetables all in a single serving. Shepherd's pie typically features mildly seasoned ground beef or lamb mixed with vegetables and topped with a mashed potato crust. It can be baked in individual portions or in a larger casserole dish for family dining.

If you are having mashed potatoes with another meal, save some for this or use refrigerated packaged premade potatoes.

Hands on time:   Total time: 30 minutes  Serves: 4

Ingredients:

    1 pound lean ground beef
    1/2 cup ketchup
    1 tablespoon Worcestershire sauce
    1 1/2 cups frozen peas and carrots mixture
    1 (24-ounce) package refrigerated mashed potatoes, such as Simply Potatoes or 2 cups leftover mashed potatoes

Instructions:

Preheat oven to 400 degrees.
In a large skillet over medium-high heat, saute the ground beef for 6 to 8 minutes, or until meat is cooked through, stirring frequently to break up the meat. Drain, if needed. Add ketchup and Worcestershire sauce and stir well to combine. Add peas and carrots and stir well to combine and defrost.
Prepare mashed potatoes according to package directions.
Place about 1 cup meat mixture in four ramekins or large ovenproof teacups. Top with about 1/2 cup mashed potatoes, spreading to cover the meat. Place the ramekins on a baking sheet. Bake for 10 minutes, or until the tops are golden, turning heat to broil for 1 minute, if necessary. Let cool for 5 to 10 minutes before serving.
