In the Kitchen With . . . Kelli Hinson, Canton
Nominated by her mother, Grace White: "Kelli can whip up a gourmet dinner like something out of an entertaining magazine, but the theme cakes Kelli creates are unbelievable. The last creation she put together was a Prada shoe sitting on a shoebox for a book club meeting. The members were reading 'The Devil Wears Prada, ' and the host wanted to surprise them. She makes special cakes for Christmas, birthdays and other special occasions, and she has had no professional training."
Hands on time: 15 minutes Total time: 8 hours Serves: 16
Ingredients:
-
1 (16-ounce) package Nabisco Nutter Butter peanut butter cookie sandwiches, divided
1/4 cup ( 1/2 stick) butter, melted
5 (8-ounce) packages cream cheese, at room temperature
1 1/3 cups granulated sugar
3 tablespoons flour
1 tablespoon vanilla extract
1 cup sour cream
1/2 cup creamy peanut butter
4 eggs
Instructions:
Preheat oven to 350 degrees. Grease the bottom and sides of a 10-inch springform pan. Coarsely chop 16 cookies and set aside. Finely chop the remaining 16 cookies and mix well with the melted butter. Press the mixture firmly onto the bottom of the prepared pan. Bake 10 minutes.
Meanwhile, beat the cream cheese, sugar, flour and vanilla on medium speed until well-blended. Add the sour cream and peanut butter and mix well. Beat in the eggs, one at the time. Gently stir in the remaining chopped cookies. Carefully pour the batter over the baked crust. Bake for 45 minutes or until almost set in the center. Cool to room temperature, and then refrigerate overnight

Notes:
Kelli Hinson says this is one of her very best cheesecake recipes --- and it requires no decorating. It's very dense and not too sweet.
