Too often we think of flank steak only as a vehicle for the grill. Elaine Prenovitz of Norcross shows how it can be used in a delicious stir-fry. She writes, "This is a recipe I modified from 'Reader's Digest Eat Better, Live Better.' You can add green pepper strips and pineapple chunks, if desired. However, we're content with the beef sitting alone on a bed of rice."

Ingredients:

4 tablespoons low-sodium soy sauce
2 teaspoons cornstarch
1 teaspoon granulated sugar
1 teaspoon fresh minced ginger
1 pound flank steak, trimmed, cut in 2-by- 1/8-inch strips
Instructions:
In a large bowl, mix soy sauce, cornstarch, sugar and ginger. Add meat and stir to coat. Marinate for 20 minutes. Drain meat and discard marinade. In a well-oiled skillet, add meat. Cook for 1 to 2 minutes, stirring constantly, until beef is lightly browned
