Oven-Fried Chicken Drumsticks

Greek seasoning, a combination of garlic, onion and spices, provides a lot of flavor with just one ingredient. For added texture, combine bread crumbs with panko --- Japanese bread crumbs --- for more crunch.

1/3 cup unseasoned bread crumbs
1/3 cup panko
1/4 cup Greek seasoning
1 egg
8 chicken drumsticks, skin removed
Instructions:
Preheat oven to 450 degrees. Line two baking sheets with foil and place a metal cooling rack on top of them. On a plate, combine bread crumbs, panko and Greek seasonings. Set aside.
In a shallow bowl, beat the egg. Dip the drumsticks in egg and roll in bread-crumb mixture until completely coated. Place on cooling rack and bake for 25 minutes, or until cooked through.

Notes:
For healthier eating, remove the skin from the drumsticks before baking. The easiest way is to pull it down to the base of the drumstick and cut it off with kitchen shears. The shears make it much easier than wrestling with a knife. It's best to use small chicken legs for quick cooking.
To allow the heat to circulate around the meat better, place the chicken legs on a cooling rack set on a baking sheet.
Variations: Substitute taco seasoning or jerk seasoning for Greek seasoning. Use skinless, boneless breasts or thighs instead of legs.
