Pasta With Garlic and Spinach

Garlic-sauteed spinach is combined with pasta and topped with chopped nuts for protein and crunch. Elizabeth Pond, who submitted this recipe, suggests, "If you are into tempeh, three or four slices of Fakin' Bacon diced up and added to the skillet is fabulous." She also suggests topping the pasta with freshly grated Parmesan cheese.

Ingredients:

1 pound pasta
1/4 cup olive oil, preferably extra-virgin
3 cloves garlic, minced, or to taste
1 bunch fresh spinach, coarsely chopped, or a 10-ounce bag of fresh spinach
1/2 cup walnuts or slivered almonds, lightly toasted
Instructions:
Cook the pasta according to package directions. Meanwhile, in a large skillet over medium heat, add the oil. Saute the garlic for one minute, until just fragrant. Add the spinach and saute until spinach is limp. Drain pasta and add to spinach. Transfer to a serving bowl and top with toasted nuts.
