This dish from Hilary King of Avondale Estates does a great job of adding nutrition to the menu. King writes: "An Italian-American friend of mine introduced me to Italian sausage via a recipe calling for it with broccoli and pasta. I liked that but thought it would be even better with tomatoes, and it is!" -- Jeanne Besser
Hands on time: Total time: 30 minutes Serves: 4
Ingredients:
-
1 pound mild or hot Italian sausage, casing removed and crumbled
2 (14 1/2-ounce) cans basil and garlic or Italian-flavored diced tomatoes
1/2 pound pasta shells or other shaped pasta
2 cups broccoli florets
1/4 cup grated Parmesan cheese
Instructions:
Put water up for pasta. In a lightly oiled skillet, brown sausage. When cooked through, remove to a plate with a slotted spoon and set aside. Wipe out pan and add tomatoes with their juice. Add sausage and bring to a simmer.
Meanwhile, add pasta to boiling water. Two minutes before the pasta is ready, add the broccoli florets to the boiling pasta water. Cook for 2 minutes and drain. Place pasta and broccoli in a serving bowl. Add sausage and tomato mixture and toss to combine. Top with grated cheese.

Notes:
Hilary King says, "To make the dish even more nutritious, substitute turkey sausage and whole-wheat pasta." Since King's recipe uses only four ingredients, I have added grated cheese for the fifth, but you can add fresh basil or another seasoning.
