Q: Taqueria Los Hermanos makes the best Tres Leches I have ever eaten. Being of Mexican descent, I'm very particular about so-called "Mexican restaurants." Now, if I could get that recipe, that would be awesome.

A: Miguel Romero, co-owner of these family-run restaurants, was happy to oblige. A white cake is soaked with a combination of half-and-half, heavy cream and evaporated milk, then topped with sweetened whipped cream studded with fresh fruit.

Hands on time: 30 minutes  Total time: 2 hours  Serves: 15

Ingredients:

    1 (18.25-ounce) white cake mix
    2 cups heavy cream, divided
    3/4 cup half-and-half
    3/4 cup evaporated milk
    1/2 cup confectioners' sugar
    1 teaspoon vanilla extract
    1 cup chopped pineapple ( 1/2-inch pieces)
    1 cup chopped strawberries ( 1/2-inch pieces)
    1 cup halved seedless red grapes
    3 kiwi, peeled and chopped ( 1/2-inch pieces)
    Prepare cake mix according to directions for sheet

Instructions:

Prepare cake mix according to directions for sheet cake. Cool completely.
In a bowl, combine 3/4 cup cream, half-and-half and evaporated milk. Transfer to a spouted measuring cup or other cup with a pouring lip.
With a knife, lightly scrape the surface of the cake. (Loosening the crust allows the milk mixture to penetrate better. Do not remove the scraped crust.) Gradually pour the three-milk mixture over the cake, using a pastry brush to distribute it evenly, and letting it soak into the cake before adding more. Set aside.
With an electric mixer, whip the remaining 1 1/4 cups cream, sugar and vanilla. Spread over cake. Arrange the pineapple, strawberries, grapes and kiwi on top of whipped cream. Chill for at least 1 hour before serving.

Per serving: 325 calories (percent of calories from fat, 49), 4 grams protein, 39 grams carbohydrates, 1 gram fiber, 18 grams fat (9 grams saturated), 52 milligrams cholesterol, 261 milligrams sodium.
