Peppered Halibut With Asian Spice Rub

Halibut works well on the grill because it usually comes in thick fillets and doesn't flake apart too easily. Its mild flavor holds up nicely to the strong spices of this rub.

Hands on time: 20 minutes  Total time: 40 minutes  Serves: 4

Ingredients:

    1/4 cup curry powder

    1/4 cup cumin seeds, toasted, then ground

    2 tablespoons ground coriander

    1/2 cup fresh cilantro, minced

    1 tablespoon fresh garlic, minced

    2 pounds halibut fillets, divided into 4 equal portions

    Juice of two limes

    Sea salt to taste

    Freshly ground black pepper to taste

Instructions:

Combine the curry powder, cumin, coriander, cilantro and garlic. Rub into the halibut fillets evenly just before grilling. Place the fillets over a well-greased grill grate (Pam works fine), otherwise the fish will stick and fall apart. Cook the fillets for about 5 minutes on each side, searing the outside of the fish but making sure it's opaque in the center. Evenly sprinkle the fillets with the lime juice, sea salt and pepper before serving.
