Q: Could you help me find the recipe for Prickly Pear Margarita? This delicious drink is served at Buckhead's Nava restaurant.

A: Nava was kind enough to part with instructions for their signature drink. The recipe was a joint effort between owner/president Pano Karatassos, chef/partner Kevin Rathbun and general manager John McDaniels.
The first sip of this libation has a touch of sweetness, quickly followed by a refreshing burst of tartness.

Hands on time: 10 minutes  Total time: 1 hour and 10 minutes  Serves: 6

Ingredients:

    1 cup granulated sugar
    1 1/2 cups hot water
    1 1/2 cups fresh lemon juice
    1 1/2 cups fresh lime juice
    1 cup Cuervo Gold tequila
    1/2 cup triple sec
    1/2 cup prickly pear syrup
    1 lime, divided into 6 wedges

Instructions:

Mix sugar with hot water to dissolve into simple syrup. Add lemon and lime juices and stir to mix. Add tequila, triple sec and prickly pear syrup and mix thoroughly. Chill for one hour. Mix in a blender to froth. Serve in a salt-rimmed glass, either straight up or over ice. Garnish with a wedge of lime.

Prickly pear syrup is available from Cactus Candy Co. in Phoenix (602-956-4833).

Per serving: 388 calories, 1 gram protein, 72 grams carbohydrates, 1 gram fiber, no fat, no cholesterol, 10 milligrams sodium.
