Low fat:
Marty Milner (aka Prince Mardo) of Snellville takes vegetarian French bread pizza to another level, baking fresh sliced tomatoes and onions instead of using a traditional simmered sauce. She adds a layer of cheese and cooks it until bubbly and browned. The mix can be spread on the bread like a pizza or the bread can be torn and used to dip into the sauce like fondue.

Ingredients:

1 small Vidalia onion, sliced very thinly
3 large, ripe tomatoes, sliced thinly and blotted dry
1 tablespoon dried Italian herbs
1 (8-ounce) package mixed shredded Italian cheeses
2 loaves French bread, split in half lengthwise
Instructions:
Preheat oven to 450 degrees.
In a well-oiled ovenproof skillet or baking pan, add a layer of onions and sprinkle with salt and pepper. Top with a layer of tomatoes and sprinkle with Italian herbs. Continue until you use up the onions and tomatoes.
Bake until contents begin to bubble and sizzle. Remove from oven and change setting to broil. Layer shredded cheese on top of onions and tomatoes. Sprinkle cheese with herbs (reserve some herbs for bread). Put skillet under broiler and cook until cheese begins to bubble and brown on the edges (or until whole pan is bubbling according to taste).
Place French bread on a lightly oiled cookie sheet and sprinkle with herbs. Add to oven and cook until edges are crisp and golden.
