Q: Georgia Grille is my favorite neighborhood restaurant, and they have an awesome pumpkin soup. It is not like the usual sweet version; this one has a hint of smoky pepper flavor and a little heat that makes it unique. I would love to have the recipe.

A: The heat comes from pureed jalapenos and the smokiness from hickory-smoked poblano peppers, says Karen Hilliard, chef-owner of Georgia Grille. To get this flavor at home, use an outdoor grill with hickory wood chips or a stovetop smoker.

Ingredients:

1/4 cup vegetable oil
2 cups onions, diced
2 tablespoons fresh jalapeno peppers or jarred jalapenos in vinegar, pureed
6 large potatoes, peeled and diced
3 cups pumpkin puree
6 cups chicken stock
2 cups heavy cream
1/2 cup hickory-smoked or roasted poblano peppers, diced
2 teaspoons cumin
2 teaspoons salt, or to taste
Instructions:
In a stockpot, heat the oil and saute the onions and jalapenos. Add the potatoes and cook for two minutes, stirring frequently to prevent sticking. Add the pumpkin puree.
Whisk in chicken stock and boil for two minutes.
Reduce heat and simmer until potatoes are tender, about 20 minutes. Stir in cream, poblano peppers, cumin and salt and cook until heated through.

Notes:
If hickory smoking is not an option, just roast the peppers. You'll lose out on the smoky flavor, but the soup will still be delicious. For faster prep time, use the pulse button on a food processor to puree the jalapenos and dice the onions, potatoes and poblano peppers in small batches. Consistency may be adjusted with stock, cream or pumpkin puree.
