Besides tasting good, this sauce's colorful presentation dresses up the meal, and the variety of textures makes it memorable.

Hands on time:   Total time: 30 minutes  Serves: 4

Ingredients:

    Quick Chicken
    Makes 4 servings

    4 boneless, skinless chicken breasts, pounded to 1/2-inch thickness
    2 tablespoons balsamic vinegar, divided
    6 ounces portobello mushrooms, cut into 1-inch pieces
    1 (10-ounce) bag fresh spinach
    1 (14 1/2-ounce) can diced or stewed tomatoes with basil, garlic and oregano

Instructions:

In a well-oiled skillet, saute chicken breasts for 3 to 4 minutes per side. Remove from pan and sprinkle with 1 tablespoon balsamic vinegar. Cover with foil and set aside. Add mushrooms to the skillet and saute until softened. Add spinach and saute until wilted. Add tomatoes and their juices and remaining 1 tablespoon vinegar. Simmer for 2 to 3 minutes. Add chicken breasts and cook until warm. Season with salt and pepper.

Notes:

To round out the meal: Penne pasta with shredded Parmesan cheese
