Add a little spice and a lot of crunch to your dinner with this light salad. The lemon dressing balances the subtle burn from the radish without being overpowering.

Ingredients:

FOR THE DRESSING:
Juice of 1 lemon
1/4 cup olive oil
1/4 teaspoon granulated sugar
1 tablespoon finely chopped fresh dill
Salt
Freshly ground pepper
FOR THE SALAD:
1 head Boston lettuce, washed, dried and torn into bite-size pieces
8 radishes, thinly sliced
1 large apple, cored and sliced into thin wedges
Instructions:
To make the dressing: Juice the lemon into a small glass bowl. Slowly whisk in the olive oil to incorporate. Whisk in the sugar and dill; season to taste with salt and pepper.
For the salad: Arrange the lettuce leaves in a serving bowl. Top with the radish and apple slices. Drizzle with dressing.
