Cuisine: Dip Irish

What Can I Bring?

Perfect for: Luncheons, casual parties.
Make and take: Assemble at home, then microwave at event.
Made famous by: Diane Cavaliere of Roswell, who says, "If you like Reuben sandwiches, you'll love this dip." The recipe comes from her friend Nancy Pietras in Pennsylvania.

Hands on time: 10 minutes  Total time: 15 minutes  Serves: 40

Ingredients:

    16 ounces sour cream
    8 ounces cream cheese, softened
    12 ounces shredded Swiss cheese
8 ounces lean corned beef, chopped into small pieces
1 (15-ounce) can sauerkraut, rinsed, drained and squeezed of excess water

Instructions:

In a mixing bowl, combine the sour cream, cream cheese, Swiss cheese, corned beef and sauerkraut. Spread in a microwave-safe 9-inch square baking dish. Microwave 4-5 minutes until the cheese is melted and the dip is heated through, stirring once or twice during cooking.

Notes:

> Tip: This makes a lot of dip, so serve it at large gatherings.

This hot dip tastes just like a deli sandwich. Serve it on miniature rye bread slices.
