Q: I had the pleasure of dining at Roy's, where a group of us enjoyed Hawaiian fusion cuisine. A couple of people in our group ordered the Hawaiian Martini and raved about it. Could you print the recipe?
- Karen Walsh, Lawrenceville

A: This martini with a tropical twist, courtesy of coconut rum and fresh pineapple, is Roy's signature drink. The mixture is made a day ahead so the pineapple flavor infuses the alcohol. For a super cold martini, shake over ice and strain just before serving.

Hands on time: 5 minutes  Total time: 9 minutes  Serves: 6

Ingredients:

    9 ounces vodka
    3 ounces vanilla vodka
    1 ounce coconut rum
12 (1-inch) chunks of fresh pineapple

Instructions:

Combine vodka, vanilla vodka and coconut rum. Add half the pineapple and refrigerate overnight. Just before serving, discard pineapple. Pour into glasses and garnish each drink with a fresh chunk of pineapple.
