This elegant entree belies its ease of preparation. Daniel Cohan of Atlanta explains, "This is a recipe my wife, Sandi, and I developed when we wanted a gourmet restaurant-style meal at a home-cooking price. Since all three ingredients cook simultaneously, we find that we can easily prepare this in about 20 to 25 minutes, and it's a delicious treat to share after long days at med school and grad school."

For even fresher taste, Cohan suggests topping the salmon with a light coating of mayonnaise and a dusting of fresh dill and lemon juice before cooking and sprinkling the dish with Parmesan cheese before serving.

Hands on time:   Total time: 30 minutes  Serves: 4

Ingredients:

    1 (9-ounce) package refrigerated cheese ravioli
    3 tablespoons olive oil
    1 pound salmon fillet
    1 teaspoon garlic salt
    1 large head of broccoli, cut into bite-size florets

Instructions:

Prepare the ravioli according to package directions.
Meanwhile, lightly coat the salmon with some of the olive oil and sprinkle with garlic salt. Broil until the top begins to brown and the fish is just cooked through. Cut into bite-size pieces.
While the ravioli and salmon are cooking, steam the broccoli until tender. In a serving bowl, combine the ravioli, broccoli and remaining olive oil and toss to combine. Add additional garlic salt or oil to taste. Top with the salmon.
