Adapted from a recipe created by Jim Towe’s mother. This was a popular, thrifty meal to feed six growing boys in his family. Jim Towe and Terri Haugen, empty-nesters in Sandy Springs, can get three meals out of 2 cans of salmon, Haugen says. -- Bo Emerson

Ingredients:

2 (14.75-ounce) cans salmon, with liquid
2 tablespoons dried onion, or to taste
Pepper to taste
1/2 teaspoon hot sauce, or more to taste
2 eggs
3 tablespoons bread crumbs
2 tablespoons olive oil
Instructions:
In a medium mixing bowl, empty cans of salmon with liquid. Add onion, pepper and hot sauce and mix. In a small bowl, beat eggs, then add to salmon mixture. Add bread crumbs. Mix them in gradually to ensure the texture you want. Form mixture into patties. Heat oil in skillet. Sauté patties, about 8 minutes per side.
