Sesame Chicken and Green Beans

Philip Haluska of Atlanta, who submitted this recipe, suggested cooking some farfalle (bow-tie) or other shaped pasta while you prepare this chicken. Toss the pasta with olive oil and/or butter and stir in a clove of minced clove and some chopped parsley. Sprinkle with grated Parmesan

Hands on time:   Total time: 30 minutes  Serves: 4

Ingredients:

    4 boneless chicken breasts, about 5 ounces each
    1/2 pound green beans, cut in 2-inch pieces
    1 tablespoon fresh lemon juice
    2 tablespoons chile oil or sesame oil
    2 tablespoons toasted sesame seeds
    Salt and pepper to taste

Instructions:

Cut chicken breasts crosswise into 1-inch slices. Heat a well-oiled skillet or wok over medium high heat, add chicken strips and cook until they turn white, about 5 minutes. Add green beans, and salt and pepper to taste. Stir well, cover, and simmer 5-8 minutes. Stir in lemon juice, chile oil or sesame oil, stir well and serve with sesame seeds on top.

Notes:

You can make this an Asian meal with rice and a sliced cucumber salad in a Thai-style dressing (1 tablespoon sugar, 1/4 cup vinegar and 2 tablespoons soy sauce). The taste and scent of sliced oranges for dessert will leave you in a mellow after-dinner mood.
