A hearty salad can be satisfying in addition to being healthful.
Feta cubes packed in oil provide added flavor and the base for a ready-made dressing. Just add a squeeze of lemon juice to brighten it. Most supermarket fish departments sell cooked shrimp or will steam shrimp at no additional charge. A sprinkling of fresh dill or a spoonful of capers is a flavorful way to finish the dish.

Ingredients:

1 (5-ounce) bag mixed salad greens
1 cup grape tomatoes, halved
1/2 cup feta cheese cubes packed in oil
1 tablespoon fresh lemon juice
1/2 pound steamed peeled shrimp
Instructions:
In a large serving bowl, add salad greens and tomatoes. Add feta and 2 tablespoons of packing oil (shake well to mix up herbs) and toss to combine. Add lemon juice and salt and pepper to taste and toss again. Top with shrimp.
