Slow-Cooked Barbecue Pork

Pork tenderloin is a more expensive cut of meat, but its lean nature makes it a good fit for those desiring to eat more healthfully. And it's cheaper than eating out. It's ideal for cooking on weekends and saving leftovers for busy weeknights. This freezes well and can be served on a bun to stretch it further.

Ingredients:

1 onion, sliced
3 pounds pork tenderloin
1 to 1 1/2 (18-ounce) bottles barbecue sauce
Instructions:
In a crockpot, place onion; top with pork. Cook on low for 8 to 10 hours or on high for 4-6 hours. Take the pork and onion out and discard the leftover juice. Shred the pork and put back in the crockpot. Cover with barbecue sauce and cook on low for 1 to 2 more hours, stirring occasionally and adding more sauce if necessary.
