Italians combine textures and complementary tastes so that their dishes manage to burst with flavor. One of my favorites is a simple trattoria-style pasta dish, Spaghetti all'Amatriciana. Pasta is paired with a full-flavored sauce that balances salty pancetta, a flavorful Italian bacon, with the acidity of chopped tomatoes and the bite of hot red pepper flakes. Chunks of onion, with some of the crunch retained, contrast with the chew of the meat and al dente pasta. -- Jeanne Besser

Ingredients:

8 ounces spaghetti
1/3 pound pancetta, coarsely chopped
1 onion, coarsely cut into 1-inch chunks
1 teaspoon crushed red pepper
1 (14 1/2-ounce) can diced tomatoes
Instructions:
Prepare spaghetti according to package directions. Reserve 1/4 cup pasta water before draining. Meanwhile, in a well-oiled skillet over medium-high heat, add pancetta and cook until it begins to release some of its fat, about 2-3 minutes. Add onion and crushed red pepper and cook until onion softens, about 3-5 minutes. When pancetta begins to crisp, add tomatoes and stir. Bring to a simmer and cook, stirring frequently, for 15 minutes.
Add drained pasta to tomato sauce and stir to combine. If necessary, add a couple of tablespoons reserved pasta water to moisten.
