Spaghetti With Parsley-Garlic Sauce

by adding vibrancy, freshness and astringency to an "ordinary" pasta dish that might not normally even get a second glance.

Hands on time:   Total time: 30 minutes  Serves: 4

Ingredients:

    8 ounces spaghetti
    1/4 cup olive oil or butter
    1/4 cup minced garlic
    1/3- 1/2 cup minced Italian parsley
    1/2 cup grated Parmesan cheese

Instructions:

Prepare spaghetti according to package directions. Reserve 1/4 cup cooking water before draining.
In a large skillet over medium heat, add oil. Saute garlic until fragrant and softened but not browned. Add parsley and saute for 1 to 2 minutes, or until softened, but still bright green. Add drained pasta and stir to combine. If dry, add 1 tablespoon cooking water at a time until desired consistency is reached. Transfer to serving bowl and top with cheese.
