Speedy Shrimp Gumbo

Who knew gumbo could be this quick and this good? Keri Vereen of Atlanta can put this classic Cajun meal on her dining table in less than 30 minutes.

Hands on time:   Total time: 30 minutes  Serves: 6

Ingredients:

    1 12-ounce bottle chili sauce
    1 16-ounce jar salsa
    1 16-ounce bag frozen okra gumbo vegetables, rinsed
    1 16-ounce bag frozen boiled shrimp, thawed and rinsed
    Cooked rice

Instructions:

In a Dutch oven over medium-high heat, combine chili sauce, salsa and vegetables and bring to a boil, stirring occasionally. Add boiling water if needed to reach desired consistency. Add the shrimp and simmer 5 minutes, stirring occasionally. Serve over rice.
