Here's a delicious one-dish meal from Colleen McMahon that you can put together in 20 minutes, including waiting for the water to boil. She came up with it on a "pantry day,” one of those times she just used what she had on hand. It's easily doubled or tripled for a crowd, and if they're extra-hungry, offer shredded Mexican-mix cheese and sour cream.

Ingredients:

12 cheddar-potato frozen pirogies (Mrs. T's)
1 green bell pepper, chopped
1 onion, cut into rings
1 (14.5-ounce) can black beans, drained
1 (14.5-ounce) can Ro-Tel tomatoes, with their juice
Instructions:
Bring a pot of water to a boil and place frozen pirogies into it. Cook at a gentle boil for about 5 minutes to thaw.
Meanwhile, spray a frying pan with cooking spray and saute green pepper and onions until tender. Add black beans and Ro-Tel tomatoes and heat through.
Place 3 pirogies each in 4 serving bowls, and top with black bean-tomato sauce.
