Spicy Peach Grilled Chicken

Hoping to savor the Georgia peach season as long as possible, I search for ways to keep stone-fruit flavors abounding. Here, grilled chicken is paired with a sweet and spicy peach-mustard topping. The flavors are refreshing, and the sugar from the jam should caramelize during cooking, giving the chicken crackly edges.

Hands on time:   Total time: 30 minutes  Serves: 4

Ingredients:

    1/3 cup peach jam
    1/3 cup honey mustard
    1 tablespoon chopped fresh ginger
    2 garlic cloves, minced
    4 thin boneless, skinless chicken breasts

Instructions:

In a bowl, whisk together peach jam, mustard, ginger and garlic. Place chicken in a bowl and add 1/4 cup of marinade, turn to coat well, and marinate for 20 minutes. Preheat the grill. Remove chicken from marinade and grill for 3 to 5 minutes per side, or until just cooked through. Meanwhile, in a small saucepan over low heat, warm remaining mustard mixture. Serve chicken with sauce.
