5:30 CHALLENGE: 5 INGREDIENTS, 30 MINUTES

After experimenting with a variety of prepared sauces, I am now a huge fan of the Dave's Gourmet brand found at Whole Foods and other markets. There are several flavors to choose from, and I tested this recipe with the Red Heirloom variety. Now I'm enjoying creating pasta dishes that have that slow-cooked flavor but can be made amazingly quickly.

Hands on time:   Total time: 30 minutes  Serves: 4

Ingredients:

    20 jumbo (about 2 inches before cooking) pasta shells
    1 egg
    1 (15-ounce) container reduced-fat ricotta cheese
    1 1/2 cups Italian blend shredded cheese, divided
    1 (26-ounce) jar pasta sauce, divided

Instructions:

Prepare pasta according to package directions, until al dente.
Meanwhile, in a bowl, beat the egg. Add ricotta and 1 cup shredded cheese. Set aside.
In an 8-by-8-inch baking dish, add 1 1/2 cups of pasta sauce.
When shells are done, run them quickly under warm water until just warm enough to handle. Stuff each shell with about 1 heaping tablespoon of filling (there will be some left over) and layer in baking dish. Top with remaining sauce and sprinkle with remaining 1/2 cup cheese. Cover with microwave-safe plastic wrap and microwave on high for 5 minutes, or until heated through. If you don't have a carousel, rotate the dish halfway through cooking.

Per serving: 560 calories (percent of calories from fat, 16), 28 grams protein, 88 grams carbohydrates, 3 grams fiber, 10 grams fat (5 grams saturated), 87 milligrams cholesterol, 357 milligrams sodium.
