Hands on time: 15 minutes Total time: 1 hour and 20 minutes Serves: 12
Ingredients:
-
1 pound pasta shells or corkscrews
1 pound medium cheddar cheese, grated
4 eggs
3 cups milk
2 teaspoons kosher salt (or more to taste)
Instructions:
Preheat oven to 325 degrees. Bring a large pot of salted water to boil over high heat. Add the pasta, stir once, and cook until al dente. Drain the pasta well.
While pasta cooks, prepare a 9-by-13-inch baking dish by coating with nonstick spray. Grate cheese.
Spread half the pasta in the prepared pan. Sprinkle with half the grated cheese. Top with remaining pasta and sprinkle with remaining cheese. In a medium mixing bowl, beat the eggs. Whisk in the milk and salt. Pour the egg mixture over the pasta and cheese. Do not stir! Cover the casserole with aluminum foil or a lid and bake for 45 minutes. Remove the cover and bake an additional 15 minutes. Never stir the pasta while baking.

Notes:
> Tip: This is a good recipe for introducing children to cooking.
It does involve boiling the macaroni on the stovetop and handling a large pan, however, so make sure an adult is on hand for supervision and assistance.
"This dish comes out golden, chewy and crunchy on the sides and creamy in the middle, " says longtime mac-and-cheese maker Barbara Henry. "It's positively addictive, and anybody can make it."
