Sweet and Sour Pork

In the warmer months, I tend to use my outdoor
grill like an oven, cooking among the mosquitoes so that my kitchen stays cool. When I get tired of chicken and beef, I like to cook pork -- although it needs to be carefully watched to avoid overcooking. This marinade has sweetness from the honey and barbecue sauce and a bit of tang from the lime and ginger. -- Jeanne Besser

Hands on time:   Total time: 30 minutes  Serves: 4

Ingredients:

    1/2 cup barbecue sauce
    2 tablespoons fresh lime juice
    2 tablespoons honey
    1 tablespoon grated fresh ginger
    4 boneless pork loin chops

Instructions:

Preheat the grill. In a small bowl, whisk barbecue sauce, lime juice, honey and ginger. Reserve half of the sauce. Coat pork chops with remaining sauce and let sit 15 minutes. Grill chops 4 to 6 minutes a side, or until the internal temperature reads 150 to 155 degrees, basting with reserved sauce during cooking.

Notes:

Because pork chops vary in thickness, it is difficult to give exact cooking times, but usually this much is true: For the meat to be juicy and still have a touch of pink, cook it just less than you think you should.

To make the meal: mashed sweet potatoes and asparagus
