Corn and lime are a great flavor team, especially when spiked with jalapeno and pimento.

    2 pounds plain frozen corn
    4 green onions, chopped
    1/4 cup chopped fresh cilantro
    1 (4-ounce) jar diced pimentos, drained
    2 to 3 jalapenos, seeded and finely chopped
    1/2 teaspoon salt
    1/4 teaspoon ground cumin
    Juice from 2 limes


Defrost the corn in the microwave; do not overcook. Drain any excess liquid. Add the green onions, cilantro, pimentos and jalapeno. Stir in the salt, cumin and lime juice.


Tip: For family dinners, the recipe can be halved with a 1-pound bag of frozen corn, or even quartered by using a 9-ounce box of corn. Just be sure to use plain corn, not the kind that is packed in sauce.


Per serving: 74 calories (percent of calories from fat, 7), 3 grams protein, 18 grams carbohydrates, 2 grams fiber, 1 gram fat (trace saturated fat), no cholesterol, 93 milligrams sodium.
