Made famous by: May Ting Liu of Atlanta, who said her co-workers have taste-tested -- and approved -- her recipe at an office party. "I saw something similar in a magazine, and then I just adapted it, " she said.
Corn and lime are a great flavor team, especially when spiked with jalapeno and pimento.

Hands on time: 10 minutes  Total time: 10 minutes  Serves: 12

Ingredients:

    2 pounds plain frozen corn
    4 green onions, chopped
    1/4 cup chopped fresh cilantro
    1 (4-ounce) jar diced pimentos, drained
    2 to 3 jalapenos, seeded and finely chopped
    1/2 teaspoon salt
    1/4 teaspoon ground cumin
    Juice from 2 limes

Instructions:

Defrost the corn in the microwave; do not overcook. Drain any excess liquid. Add the green onions, cilantro, pimentos and jalapeno. Stir in the salt, cumin and lime juice.

Notes:

Tip: For family dinners, the recipe can be halved with a 1-pound bag of frozen corn, or even quartered by using a 9-ounce box of corn. Just be sure to use plain corn, not the kind that is packed in sauce.
