Tuna and Garbanzo Bean Salad

Here's a protein-rich, super-fast salad you might be able to put together without yet another trip to a store. If you don't have a shallot, an onion will do; and feel free to drizzle on any vinaigrette you have on hand.

Hands on time:   Total time: 30 minutes  Serves: 2

Ingredients:

    1 (16-ounce) can garbanzo beans, rinsed and drained
    1 (6-ounce) can tuna, rinsed and drained
    2 ribs celery
    1 shallot
    3 tablespoons balsamic vinaigrette

Instructions:

In a mixing bowl, combine beans and tuna, stirring lightly to break up tuna. Slice celery and shallot and add to bowl, stirring to combine. Drizzle on vinaigrette and season to taste with freshly ground black pepper.
Serve over lettuce.

Nutrition:

Per serving: 303 calories, (percent of calories from fat, 11), 28 grams protein, 39 grams carbohydrates, 9 grams fiber, 4 grams fat, 21 milligrams cholesterol, 332 milligrams sodium.
