Turkey Breast With Cranberry Relish

I recently explored cooking a turkey breast in the microwave and was amazed that not only did it cook in under 30 minutes, but it was as succulent as one that roasts for close to 2 hours. I paired it with a raw cranberry-orange relish jazzed up with fresh ginger to add depth of flavor. Many markets carry fresh cranberries year-round in the freezer section.

Hands on time:   Total time: 30 minutes  Serves: 6-8

Ingredients:

    1 (3 1/2- to 4-pound) bone-in half turkey breast
    2 cups fresh or frozen cranberries
    1/2 orange, cut into 4 pieces
    1-inch square fresh ginger, cut into 4 pieces
    1/3 to 1/2 cup granulated sugar

Instructions:

Season turkey with salt and pepper. Place in a microwave-safe 8-by-8-inch dish and cover with wax paper. Microwave on high for 25 to 30 minutes, or until turkey is cooked through. (If your microwave doesn't have a carousel, turn turkey every 10 minutes.)
Meanwhile, in a food processor fitted with a steel blade, pulse cranberries, orange and ginger until chopped. Transfer to a bowl and stir in 1/3 cup sugar. Taste and add sugar as needed.
Serve turkey with relish on the side.

Notes:

To round out the meal: Peas and garlic mashed potatoes
