Make and take: Assemble at home in a microwave-safe casserole dish, and then microwave at your destination.
Tip: This casserole is a snap because it cooks in the microwave. However, if you prefer, you can bake it in the oven instead.
Spice it up: Canned green chiles are not hot, but you can add a little heat to this dinner by stirring in a half or whole jalapeno, seeded and finely chopped.

Ingredients:

1 (10 3/4-ounce) can condensed cream of chicken soup
1 cup milk
3 cups chopped cooked turkey
1 (4-ounce) can chopped green chiles
1 cup frozen corn kernels
2 cups crushed tortilla chips (about 7 ounces), divided
1/4 cup sliced green onions
2 cup shredded cheddar cheese (or cheddar-Monterey Jack blend)
Paprika
1 cup salsa, warmed
Instructions:
In a large bowl, combine soup, milk, turkey, chiles and corn. In a lightly greased 2-quart casserole, sprinkle about 1/3 of the crushed chips. Pour half the turkey mixture over them. Sprinkle with half of the green onions and half of the cheese. Layer another 1/3 of the tortilla chips and top with the remaining turkey mixture, green onions and cheese. Top with the remaining chips. Sprinkle the top with paprika. Cover and microwave at full power for 5 minutes. Turn and microwave another 5 minutes. (Or bake in a preheated 350-degree oven for 30 to 40 minutes, until bubbly.) Let stand a few minutes before serving. Serve with warm salsa on the side.
