Q: I'd love to try making the coleslaw at Barbecue Works at Underground Atlanta. This is the most popular place in the Underground food court and a lifesaver to those of us looking for a hearty lunch downtown. Can you get the recipe?

A: The dressing owes its creaminess to Miracle Whip, says manager Der Chang Sun, but Sun says that's not the secret to this coleslaw's success. "It's more the process than the ingredients, " he says. "We hand-cut the cabbage, and we prepare it in small batches, just enough to last an hour or so."

Hands on time: 10 minutes  Total time: 10 minutes  Serves: 8

Ingredients:

    1 cup Miracle Whip
    1/4 cup granulated sugar
    1/4 teaspoon kosher salt
    1 tablespoon apple cider vinegar
    Dash celery seed
    Dash ground black pepper
    1 head green cabbage, quartered, cored and thinly sliced
    1 medium carrot, julienned

Instructions:

In a large bowl, combine the Miracle Whip, sugar, salt, vinegar, celery seed and pepper, and stir until sugar is dissolved. Add the cabbage and carrot, and toss until the vegetables are evenly coated with the dressing.

Notes:

Barbecue Works' general manager Der Jeun Sun and manager Der Chang Sun suggest you select a tender head of cabbage so the slaw is not tough and chewy.

Per serving: 197 calories (percent of calories from fat, 63), 2 grams protein, 17 grams carbohydrates, 3 grams fiber, 14 grams fat (2 grams saturated), 10 milligrams cholesterol, 272 milligrams sodium.
