This is a cake that is especially good with tea. For a more cakelike texture, use a food processor to pulverize the nuts and coconut.
Hands on time: 10 minutes Total time: 1 hour Serves: 12
Ingredients:

1/2 cup (1 stick) butter
1 cup sugar
3 large eggs
2/3 cup milk
1 tablespoon vanilla extract
4 cups vanilla wafers, crushed
1 cup sweetened grated coconut
1 cup pecans, chopped
Powdered sugar for dusting (optional)
Instructions:
Preheat oven to 325 degrees. Grease and flour an 8-inch square pan. Cream butter and sugar until fluffy. Beat in the eggs, one at a time, mixing well after each addition. Blend in milk and vanilla and set aside. In a separate bowl, combine wafer crumbs, coconut and chopped pecans. Add to butter mixture. Pour batter into prepared pan. Bake for 45 minutes, or until a toothpick inserted in center comes out clean. Let cool 10 minutes, then remove from pan. If desired, dust with powdered sugar before serving.
