Watermelon With Mint, Lime and Feta

What Can I Bring?

This easy summer salad is so refreshing, it's practically bracing.

Perfect for: Cookouts, summertime parties, luncheons.
Make and take: Assemble, wrap in plastic, carry.

Hands on time: 10 minutes  Total time: 10 minutes  Serves: 8

Ingredients:

    1/2 medium watermelon
    2 tablespoons chopped mint leaves
    4 ounces mild feta cheese, crumbled
    Juice of 1 lime
    Salt and freshly ground pepper, to taste

Instructions:

Using a melon baller, scoop the flesh of the watermelon from the shell. (Or scoop flesh with large spoon and cut it into bite-size pieces.) In a large bowl, toss the watermelon, mint and feta with the lime juice, and season to taste with salt and pepper. Return mixture to the watermelon shell and serve. -- Adapted from "Vegetarian Cooking for Everyone" by Deborah Madison (Broadway Books, $40)

Notes:

Use the scooped-out watermelon shell as a serving bowl. Not only does it look great, but it's also disposable --- you don't have to bring home the bowl.
