Yukon Gold Mashed Potatoes

Ingredients:

2 pounds Yukon Gold potatoes
Coarse kosher salt
1 cup (2 sticks) unsalted butter
1/4 cup whole milk
Instructions:
Place the potatoes in a pot. Cover with cold water, and season with salt. Bring to a boil, and reduce heat to simmer. Cook until fork tender, about 40 to 45 minutes, depending on the size of the potatoes.
Meanwhile, place a food mill fitted with the finest blade over a large saucepan.
Drain the potatoes in a colander. Peel the potatoes while they are still hot.
Fill the prepared food mill with the potatoes. Work the potatoes and butter through the food mill. Stir until well-combined. Add milk as needed to achieve a smooth, creamy consistency. Taste and adjust for seasoning with salt. Cover and keep warm.
