“The pure simplicity of this old-fashioned dish belies its delightful flavor and texture,” notes cookbook author and recipe tester Virginia Willis. “Panko, also known as Japanese bread crumbs, is certainly not old- fashioned, but really makes this dish creamy and light. The butter-dotted top turns golden brown in the oven and it smells incredible with the touch of spice. My neighbor Lloyd, who shared from the bounty of the testing, gave this one a thumbs up!”

Ingredients:

FOR THE PUDDING:
3 eggs
1 cup granulated sugar
3 cups whole milk
1 teaspoon vanilla extract
2 cups bread crumbs (or panko, Japanese bread crumbs)
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
Pinch salt
2 tablespoons unsalted butter
FOR THE SAUCE:
1/2 cup granulated sugar
2 tablespoons all-purpose flour
1 cup water
1/2 cup raisins
1/2 teaspoon vanilla extract
Instructions:
To prepare the pudding: Preheat oven to 350 degrees. In a bowl, combine the eggs, sugar, milk, vanilla, bread crumbs, cinnamon, nutmeg and salt. Pour into a 1 1/2-quart baking dish. Dot top with butter. Bake until center is just firm, about 30 minutes.
To prepare the sauce: In a small saucepan, combine the sugar, flour, water and raisins. Bring to a boil over high heat. When the sauce is thickened and clear, about 3 minutes, add vanilla. Serve warm pudding with warm raisin sauce.
